Ingredients: Handful of mint leaves, 1 lime (Cut into 4 wedges), 2 tablespoons white sugar or to taste, 1 cup ice cubes, 50ml white or amber rum, ½ cup soda
Method: Place mint leaves and 2 lime wedges into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils & lime juice. Add one more lime wedge and the sugar and muddle to get the lime juice released. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the 50ml rum over the ice and filled with soda. Stir, taste and add more sugar if desired. Garnish with the remaining lime wedge and a sprig of mint.
Variations: Add your favorite fruits such as fresh strawberries, passion fruit or blueberries to give this classic a summery vibe.
